The other day, I was trying to decide what to have for breakfast. Usually I’m not hungry when I first wake up, but then I end up waiting too long and I start to feel a little sick. I’ve been trying to be more mindful about not letting fresh produce go to waste, so the little bowl of cherry tomatoes caught my attention. I threw together this simple recipe because I wanted to try some sourdough toast ideas.

Tomato Herb Sourdough Toast Ideas
Here’s What You’ll Need:
- 2 slices of sourdough bread
- ½ cup of cherry tomatoes
- Fresh herbs – basil, oregano, thyme
- 1 clove garlic, minced
- Salt
- Cracked pepper
- Olive oil

Here’s What You’ll Do for Sourdough Toast Ideas:
Rinse the produce, then halve the tomatoes and mince the garlic. I prefer to use a mix of both red and golden cherry tomatoes. I also usually use canned garlic because it’s quicker, but the flavor is definitely not as good as fresh garlic! Just use whatever is most important to you.

Saute minced garlic on low in 1 tbsp. of olive oil for 2 minutes. Give it a few stirs every minute or two.
Toss the tomatoes in the pan and sprinkle with salt and cracked pepper. There is just something about cracked pepper. It adds so much flavor, and I just feel so fancy using it!

Rinse off the herbs, then remove the stems and roughly chop them.
Sprinkle the herbs on the tomatoes and gently stir them for a few minutes. Y’all, your kitchen is going to smell uh-maze-ing.
Toast or broil the sourdough bread while the tomatoes are cooking. A goal of mine is to learn how to bake fresh sourdough, but I have just been using store-bought for now.

Brush the now-golden sourdough with olive oil. Gently pour the tomato herb mixture on top.

You can also add some arugula or sliced avocado if you want to get some greens in! This breakfast is so simple and only takes 15 minutes to throw together, but I guarantee it will have you feeling extra fancy because it’s just so pretty!
